During Summer, we love a fresh salad to keep us cool instead of a warm meal – it’s tasty, healthy and super easy to make. Although a “normal” salad with tomatoes, mozzarella and avocado is yummy enough, we like to spice things up every now and then to try something new. For this salad, we used some real summer classics: cantaloupe, arugula and feta cheese are a match made in heaven! Add a little red onion and almond slivers and you’re ready to serve a unique dish that couldn’t be more creative but fast in the making at the same time. Enjoy!
Ingredients
For the salad:
– Arugula
– Feta Cheese
– Almond Slivers
– Red Onions
– Cantaloupe
For the dressing:
– Olive Oil
– Balsamico
– Salt and Pepper
– Honey
– Mustard
Wash and rinse the arugula properly, slice the melon and onions and crumble the feta cheese over the salad. In the meantime, slightly roast the almond slivers, but be careful – they burn easily. Then mix the dressing of your choice (we’re big fans of a simple balsamic vinaigrette), just make sure that you don’t use too much honey or mustard, otherwise the whole salad will turn out too sweet or spicy.
If a salad isn’t enough to appease your hunger, put a baguette with herbs in the oven – it makes for the perfect side dish!
