Whenever we spot a cocktail on the menu that involves mint, we’re instantly tempted to order it. A favorite amongst the minty drinks is always the classic Mint Julep. While we love the original recipe with bourbon, we wanted to create something a little “lighter” without the hard licquor. Inspired by this recipe by Martha Stewart, we decided to create our own peach julep, which is fruity, minty and bubbly. Admittedly, our Bubbly Peach Julep doesn’t have much in common with the classic Julep, but we’re still head over heels for it! Try it and you’ll know what we’re talking about …
What you’ll need:
– fresh mint leaves, plus sprigs for garnish
– 2 teaspoons brown sugar (optional)
– store-bought peach juice
– club soda
– prosecco or champagne (or bourbon if you’re going for the classic julep)
– crushed ice, for serving
– physalis to garnish (optional)
Start out by tearing/chopping lots of fresh mint, to set free the flavor. Then prep your glasses by filling them with crushed ice. Toss in the mint and brown sugar and muddle a bit. Next fill your glasses about half way with peach juice, add prosecco or champagne (or bourbon if you want the original) and top with club soda. Add a few sprigs of mint and a physalis along the rim to garnish – serve with some pre-dinner appetizers to munch on.
