In our opinion, nothing beats a nice little homemade hostess gift when you’re invited for a dinner party. Usually your hostess won’t expect much, but some fresh flowers, a bottle of wine or some homemade goodies are the perfect way of showing your appreciation for the invitation. A few weeks back, we showed you how to create pretty DIY ombré cutlery, this week we’ve decided to try ourselves at homemade jams. Caramelized pear jam with fleur de sel to be exact! Sounds complicated and fancy, right? It is not – and that’s exactly why we love it!
What you’ll need:
– 1 kg ripe pears
– 200 g sugar
– 100 ml organic pear juice
– 500 g canning (jam) sugar 2:1
– 2 tsp fleur de sel
Start by prepping your jam jars (we used mason jars from Ball). Sterilize your jars and lids in boiling water for around 10 minutes, to prevent mold later on. Let them dry up-side-down on a kitchen towl.
After the jars are done, peal your pears, remove the seeds and dice them as small as possible. Once you’re done with the pears, caramelize the sugar in a large pot on medium heat until golden brown. Do not stir the sugar while it caramelizes, but make sure you keep an eye on it and don’t let it burn (it gets bitter). Once the sugar is caramelized completely, pour in the 100 ml of pear juice, again, not stirring the mixture. Bring the caramel and pear juice to a boil until the caramelized sugar is completely dissolved in the juice. Then add the diced pear and canning (jam) sugar, mix well.
Now turn up the heat and let the jam mixture boil for around 3 minutes, be sure to stir regularly. To test the consistency, use a teaspoon to place some of the jam on a cold plate, if the mass “hardens” and does not run off to the sides it is ready to be bottled.
Just before you actually bottle the caramelized pear jam, stir in the 2 teaspoons of fleur de sel, then fill into your jam jars. Close the jars tightly and let the jam cool over night to create a vacuum. For the finishing touch, add a pretty label and a bow.
