We don’t know about you, but we are fairly close to melting with the current temperatures reaching up to 37° Celsius! Naturally the only thing on our mind right now is how to stay cool, while still enjoying the sun (after all, we waited all winter for it!). Thanks to Pinterest and all the amazing ideas and recipes on there we’ve come across quite a few homemade popsicle recipes that are the perfect summer treat for hot days! We simply adore the “#bestsummerever Bucket List” feature by Martha Stewart, which includes 38 amazing ice pops to try at home. Inspired by these recipes, we decided to make our own homemade popsicles!
Hot Cocoa Ice Pops:
– milk
– hot chocolate mix (or real chocolate, which you melt)
– chocolate fondant (for dipping)
– chopped nuts or hazelnut brittle
Start by simply making hot chocolate, just like you usually would – then let it cool a bit. Fill the hot chocolate into your popsicle trays and stick into the freezer for a minimum of 5 hours. In the meantime, prepare a plate with some aluminum foil or baking sheet on it. Once the “hot cocoa” is frozen melt your chocolate fondant, then take the popsicles out of the freezer and remove them from their trays by holding them under hot water for a few seconds. Dip the popsicles into the fondant and place them on the prepared plate, quickly sprinkling the hazelnut brittle over the fondant (you have to be really quick here as it hardens fast, once it touches the frozen popsicle). Serve with a cold glass of milk!
Yogurt-Berry-Swirlers:
– yogurt (or sour cream also works – but is definitely the heavier version)
– honey
– fresh berries of your choice (we used raspberries & blueberries)
In a bowl, mix the yogurt and honey to your desired sweetness. Then, in a seperate bowl, smash your berries (you can also use the blender if you’d like it to be less “chuncky”). Add the smashed berries to your yogurt and mix just a bit to swirl. Fill into your popsicle trays and freeze for at least 5 hours.
Peach Bellini Popsicles: (editor’s favorite!!)
– very ripe peaches
– brown sugar
– rosé prosecco
This is our winner amongst the 3 recipes. Incredibly refreshing and also a perfect substitute for our Bubbly Fridays! Cut the peaches and throw them into a blender, adding as much brown sugar as desired (we used 2 peaches with about 1 teaspoon of sugar). Blend everything to form a smooth purée. Fill the bottom of your popsicle trays with the peach purée, and pour rosé prosecco over to fill completely. Stick a slice of peach along the side for a little “wow effect” – it looks soo pretty! This also works great in a non-alcoholic version, just skip the prosecco. We made one of each and loved both options!
