If we had to pick one fruit as our favorite during summertime, it would definitely be watermelon. Super refreshing, tasty and so versatile. We love it sliced as a simple snack, mixed with goat cheese and arugula for a yummy salad, and of course we also enjoy it in our smoothies and cocktails. This week’s Bubbly Friday recipe mixes two ingredients that may not appear to be a match made in heaven at first, but once you try a sip of our “Watermelon-Ginger-Cat”, you’ll love the mix of fresh watermelon and spicy ginger. So what are you waiting for? Grab your girls, make some drinks and celebrate the weekend ahead! Happy Friday!
What you’ll need:
– fresh watermelon
– organic ginger liqueur (we used this one)
– chilled prosecco
– a handfull of ice cubes
You won’t need a whole watermelon for this recipe, so start by slicing off about 1/4 of the whole. Then prepare some smaller “slices” for garnish – one per glass. For the rest, dice the fruit and throw it into a blender with some ice cubes and 1 tablespoon of the organic ginger liqueur, blend it well! If you’re a big fan of the taste of ginger, you can also go for a bit more of the liqueur, just keep in mind that it does have a bit of the typical ginger spice. Then fill some wine glasses about half way with the watermelon-ginger-mix and fill up the rest with the prosecco. Serve immediately.
