Rezept: Marokkanischer Süßkartoffel-Linsen Eintopf
(für 4 Personen)
- 500 gr Süßkartoffel
- 4-5 Karotten
- 3 Zwiebeln
- 3 Knoblauchzehen
- 1 Stange Sellerie
- 2 rote Paprika
- 250 gr Linsen (gekocht)
- 1 TL Korianderpulver
- 1 TL Cumin
- 1 TL Currypulver
- 1 TL Paprikapulver
- 1/2 TL Zimt
- 1/2 TL Kurkuma
- Prise Muskat
- Suppenpulver nach Wahl
- 2 Handvoll Baby-Blattspinat
- 1/2 Zitrone
EN: Isn’t the cold season the perfect excuse to make as many stews and soups as possible? Honestly, we could feed on the semi-liquid delicacies for months on end – and that’s exactly what we plan on doing. Whether vegetable soup, chicken soup or pumpkin soup, lentil stew or goulash, when it’s simmering in the pot together and for a long time, it simply tastes good. That’s also the way it is with this stew, which is inspired by Morocco, nice and warm, filling and makes us happy. Our absolute favourite ingredients are cooked in it: carrots, sweet potatoes and lentils. Well, if this isn’t a brilliant combination!
– 500 gr sweet potato
– 4-5 carrots
– 3 onions
– 3 cloves of garlic
– 1 stick celery
– 2 red peppers
– 250 gr lentils (cooked)
– 1 tsp coriander powder
– 1 tsp cumin
– 1 tsp curry powder
– 1 tsp paprika powder
– 1/2 teaspoon cinnamon
– 1/2 tsp turmeric
– pinch of nutmeg
– broth of your choice
– 2 handfuls baby leaf spinach
– 1/2 lemon
Place the sweet potatoes, carrots, onions, celery, red bell pepper, garlic, lentils and spices into a big pan. Cover and cook for a good hour until the sweet potato pieces soften. Use an immersion blender directly in the pan to blend half of the soup, but be sure to not blend all of the soup if you want it to have a chunkier texture. Stir in the baby spinach and lemon juice. Season with salt, pepper and chili powder to taste as desired. Thin with additional broth to desired consistency. Serve with herbs of your choice on top and enjoy!
