If someone would have told us a year ago that we’d be drinking cocktails with herbs non-stop, we probably would not have believed them. But it turns out that just about every other Bubbly Friday recipe includes some kind of herbs. Thyme, rosemary, sage, … we love it all! This week, we found an amazing recipe for a cocktail involving homemade honey-sage-syrup and of course we HAD to try it. The honey-sage-gin-fizz with its sea salt rim is a great winter drink that will surely impress your guests!
What you’ll need:
– 4cl gin
– 1 tablespoon honey sage syrup, depending on how sweet you like it
– a splash of fresh lime juice
– 150ml soda water
– a drop of honey (for the rim)
– coarse sea salt
– fresh sage leaves for garnish
For the syrup:
– 50gr honey
– 100ml water
– 5-6 fresh sage leaves
In a small pot or saucepan, mix the honey, sage & water. Stir frequently on low heat until the honey is completely dissolved. Then let the syrup cool completely (you could even prepare this a day or so ahead of time & keep refrigerated). Next, prepare your glasses by rubbing a drop of honey along the rim, then dip into sea salt. In a cocktail shaker, combine gin with the honey-sage-syrup, lime juice and ice – shake well! Pour your drinks into the prepared glasses and top with sparkling water. Enjoy!
Our tip: because the sea salt rim can be a bit intense, either serve these drinks with a straw or go very easy on the rim to create the perfect mix between honey & salt.
