While we love a warm meal to sit down to, you can make us just as happy with a great salad (remember our summer salad with melon and feta?) or a savory sandwich. For today’s recipe, we decided to share an old favorite of ours. The “Rustic Chicken Sandwich” includes a whole lot of goodness, such as rosemary, sweet cranberries and greek yogurt. You can only imagine how amazing this tastes at the end of a long day, paired with a glass of rosé wine or a cold beer. And the best part: You can prepare it the night before, so all you have to do when hunger strikes is toast a slice of bread and add some of the chicken spread. Easy enough, right?
What you’ll need:
– lean chicken breast
– fresh rosemary
– dried cranberries
– fresh lime juice of 1-2 limes
– low fat greek yogurt
– green apple
– salt & pepper to taste
– a bit of olive oil
Prepare your chicken by washing it and then marinating it in a bit of olive oil, some rosemary, as well as salt & pepper. Grill it on the BBQ or in a grilling pan until well done. Wrap in some aluminum foil and set aside to cool. In the mean time, chop your green apple and the cranberries as fine as possible. You can also add some walnuts or pecans if you like it nutty – chop those as well. Then “tear” or “pull” your chicken and chop finely, adding it to the apple and cranberries. Add the juice of 1 lime to the mix, season with fresh rosemary, salt and pepper. Then mix everthing well with the greek yogurt, to make a thick spread. Slice your bread and stick it into the toaster (or oven) for a few minutes, until golden brown and crispy. Prepare your sandwiches by taking some toasted bread and adding the chicken spread on top.
