Wie bereits letzten Freitag im Out & About von unserem Cocktail Tasting im Fabios mit World Class Barkeeperin Isabella angeteasert, gibt es heute einen der vielen Drinks die wir an diesem Abend kennenlernen durften zum Nachmachen. Der Tommy’s Margarita, welcher vor fast 20 Jahren von Julio Bermejo (der Miteigentümer von Tommy’s Mexican Restaurant in San Francisco) erfunden wurde, verzichtet auf jeglichen Schnick-Schnack und konzentriert sich auf die wesentlichen Dinge im Leben: wirklich guter Tequila, frischer Limettensaft und die natürlichen Süße von Agave Nektar. Das Resultat ist unvergleichlich gut, und musste daher sofort nachgemacht werden. Dank dem Tipp einer lieben Bekannten haben wir dem klassischen Salzrand am Glas noch das gewisse Extra verpasst. Ihr müsst genau diese Kombi probieren, einfach perfekt!
Was ihr braucht:
– 6cl Don Julio Reposado (Tequila)
– 3cl frischer Limettensaft
– knapp 2cl Agavendicksaft (wer’s weniger süß mag, gerne auch nur 1cl)
– 2 TL Yuzu Salz (in Wien zB von omk/Mochi)
– 2 TL zerstossener bio Tellicherry Pfeffer “TGSEB” (zB von Die Pfefferei)
Am besten bereitet ihr die Gläser vorab vor. Wir besitzen leider keine typischen Margarita Gläser, also haben wir Tumbler gewählt. Mit einem Mörser den Tellicherry Pfeffer fein zerstossen und auf einem Teller mit dem Yuzu Salz mischen. Das Salz ist eine Mischung aus Salz und Yuzupulver von der Schale der YuZu Zitrone. Wer das nicht auftreiben kann, kann ja mal einen DIY Versuch starten. Den Rand der Gläser mit ein wenig Limettensaft befeuchten und in die Salz/Pfeffer-Mischung dippen. Für den Drink anschließend alle Zutaten im Shaker mit Eis gut schütteln und servieren! Enjoy!
EN: As promised in last week’s Out & About from our cocktail tasting at Fabios, we wanted to share the recipe of one of the drinks we got to enjoy that evening with you. Simple but so good: Tommy’s Margarita.
“It was invented nearly 20 years ago by Julio Bermejo, co-owner of Tommy’s Mexican Restaurant in San Francisco. He thought that triple sec, the sweet stuff that’s used in the traditional margarita, was just too overpowering, drowning out the freshness and complexity of tequila. So he used the more natural and subtle agave syrup as a sweetening agent instead.”
All you need are 6cl of Don Julio Reposado tequila, 3cl of fresh lime juice and 1 or 2 cl of agave nectar, depending on how sweet you want your drink. Shake ingredients with ice and strain into a cocktail glass. For the salted rim, we gave the whole thing a twist by following the instructions from a friend: Simply exchange the sea salt for Yuzu salt and add a bit of crushed tellicherry pepper. The perfect addition to a perfect margarita!
